**Chicken Tender Salad**
So this is really simple, fast and delicious!
Here's the ingredients I used to make this salad:
•Purdue Gluten Free chicken tenders-cubed (I used 4)
•Organic Spring Mix lettuce leaves
•Chopped white onion
•Chopped apples and strawberries
•Shredded cheese
•Cubed muenster cheese
•Organic bacon bits
•Organic French dressing
You don't have to do organic anything if you don't want; just something I'm into!
The Purdue brand chicken tenders are amazing for being gluten free! I cooked mine in the toaster oven at 400 degrees till they were crispy.
So yummy!
**Not Your Average Nachos**
This is so easy that you could do it I'm your sleep!
Only 4 ingredients:
•Tortilla chips. I use organic blue corn but any brand is fine!
•Shredded Cheese
•Salsa
•Guacamole-I buy the single served packages
I sprinkle the cheese on top of the chips and toss the plate into the microwave for about 45 seconds. Throw some salsa and a little guacamole on top and its ready! Quick, yummy and so much better for you than chocolate! :)
This is seriously such a good afternoon pick me up! Here's what I used:
•Udi's Gluten Free Whole Grain bread
•Hillshire Farms hard salami
•Deli fresh turkey
•Shredded cheese (on one side only for me)
•Avocado, ranch dressing
I toasted the entire sandwich (minus the dressing) until the cheese melted. I put the dressing on top of the cheese and there ya go!
So good, fast and easy to make.
*I always toast gluten free bread. It makes me the different texture a lot easier to enjoy :)
So Ali over at Gimme Some Oven has a really awesome recipe I tried! It's all made in the slow cooker and only calls for 2 ingredients! (Ok, I used more than that)

Here's what I used:
•3 pieces of chicken breast (I would use more. About 4-6 pieces depending on the size of your family)
•A whole jar of Wild Oats organic salsa
•Two handfuls of cherry tomatoes- cut in half
•One whole, red pepper
**I'm pairing it with Yellow Rice and some shredded cheese on top
I put the chicken on the bottom of the crockpot and smothered with the salsa.
I then added the cherry tomatoes and peppers
Cooked on low for about 6 hours and voila!
SO yummy and super easy!
*Chicken Sausage w/ Potatoes and Green Beans*
Guys this one was so good and super easy!
What I used:
- Chicken Sausage (seasoned with apple and chardonnay) from Trader Joes
- Frozen Brocoli
- Local Red Potatoes
- Local Green Beans
- 3 tablespoons of olive oil (for mixture)
- 2 tablespoons of Italian dressing (for mixture)
- 2 teaspoons of garlic (for mixture)
*Potatoes and green beans were cooked in an olive oil, garlic and Italian seasoning mixture at 400° for 30 minutes until soft
YUM!
*Summer Spaghetti*
It's my version of a summer spaghetti recipe!
What I used:
*A box of Ronzoni gluten free spaghetti noodles
*Lemon Juice (Just a drop)
*Chicken Broth
*Spinach and cheese stuffed chicken sausage
*Brocoli, zucchini, cherry tomatoes, orange pepper
*Garlic
*Basil
*Mozzarella cheese
.Boil the noodles in chicken broth with a little fresh lemon juice.
.Cook spinach and cheese stuffed chicken sausage with brocoli, zucchini, cherry tomatoes, orange peppers and seasoned it all with minced garlic (2 tablespoons) and basil with a little leftover lemon juice.

.Drain and rinse pasta with cold water (It helps keep it better) .Combine the pasta with the pan of deliciousness and sprinkled mozzarella cheese on top to melt.
SO good and a nice change to traditional spaghetti!

*Loaded Baked Potato and Chicken*
This was is so interesting and SO yummy! I will let you know ahead of time that I substituted the hot sauce for homemade BBQ sauce and didn't use the bacon it called for!
Here's what you'll need:
*2 lbs of chicken *dash of salt and pepper
*8 cubed potatoes *2 tablespoons of garlic powder and paprika
*1/3 cup of olive oil *1 cup of bacon
*3 tablespoons of hot sauce *1 cup of green onions
*Preheat oven to 500°
*Mix oil, salt and pepper, paprika, garlic powder and hot sauce in a bowl
*cut, cube and add potatoes to bowl with sauce &let sit for 10 minutes
*strain the potatoes with a bowl underneath to catch excess sauce
*place potatoes in a baking dish sprayed with cooking spray
*cook for 45 minutes, stirring every 15 minutes
*cube and brown chicken then add to remaining sauce
*add chicken to potatoes once they are done and cook for 10 extra minutes
*lay cheese and 1/2 green onions and bake for 3-5 minutes or until cheese is melted
*add more green onion before serving
